Oh, boy, do we have a treat for you this week! You really can’t beat a classic, chunky shortbread served with the perfect cuppa (oops, sorry, we think our British is showing). These buttery-crumbly babies are a sweet staple that you can roll out time and again: They’re super easy, quick to make, and fun to add your own little twist to!
We made these beauties to celebrate our recent big bunny win -- have you not heard about it? Read the story here! Anyway, happy rabbits aside, here’s how we baked our lil’ shortbread bun buns…
What you’ll need:
2 1/2 cups plain flour
3/4 cups sugar
1 1/4 cups vegan butter
1/2 teaspoon vanilla extract
Some cute biscuit cutters
Any toppings/icing you fancy (or even some vegan chocolate chips .. mmm)
DIRECTIONS
Before you dive into the fun stuff, preheat your oven to 160C and line two baking trays with baking paper. Then, mix the flour and sugar together in a nice big bowl.
Next, add your softened butter (we used Flora plant-based unsalted butter) and vanilla extract. If you have a mixer, now’s the time to use it; we don’t so we had to get our hands in there (but it’s all good because we skipped arm day this week). Work it until it’s a crumbly dough that you can squeeze into a nice ball. Oh, also, if you have decided to add any cheeky extras to your biscuits - like vegan chocolate chips or sprinkles - add them to the dough now.
Sprinkle a clean countertop with some flour and then smack your dough down on it like a badass. Flatten it with a rolling pin until it’s about 1.3cm thick - it’ll look pretty chunky but that’s what we want. Use your cutters to cut out as many biscuits as you can, then place them carefully onto your baking trays. Re-roll the dough as many times as you need and keep on cuttin’.
Bake those bad boys for 12-15 minutes, or however long It takes for them to turn just a little bit golden at the bottom - so keep a beady eye on them.
